在沒有裡 打開一條未來的路

在台灣,走出校園等同進入就業職場,這似乎是再理所當然不過的事,然而,拿到學位後,等於找到一條自己想走的路嗎?倒也未必,有些人或許能從學業裡發現自己的興趣,但有些人則不。

今日,我們推開FOLKS的大門,聽到的故事是學校沒教的事,來聽聽方翊老闆的故事吧!!

 

找到興趣 才找到真正想做的事

在FOLKS屆滿一年的時刻,回頭來看當初開店這件事,既不是湊巧,也不是突然,而是刻意而為。從大學畢業初期,方翊依照主修工業工程的背景進入CNC產業工作,雖然能找到工作,卻不是真心想做的事,因此工作頭兩年不斷換工作,而方翊也不確定自己到底想做什麼、喜歡什麼,直到有一天走訪了台中某間咖啡店,看到店老闆端上有拉花的咖啡,他忽然很肯定的在心中告訴自己:我想學咖啡,我要開一間咖啡店。
從那一刻開始,他離開工業相關產業,以學習的心態,為自己找機會接觸咖啡相關事務,工作也從工業領域轉進咖啡店、餐廳、民宿,從頭開始學廚房的工作、吧檯的工作、咖啡的製作,而這一做將近五年時間,這五年好比重新讀一次大學,他用寶貴的時光為自己儲備實現夢想所需的技巧與才能。

即使未來是荒野是沙漠 但從家出發仍是心安

常有人形容選對開店的位置,就好比是票房保證,但現在的FOLKS坐落在彰化市外圍區,是在地人出外的交流道口,也是往市郊連結的彰水路,因此常有客人說FOLKS所在地是秀水,而非彰化。

面對人流車流快速移動,商業活動以小型工廠為主體的區域,人們的中餐休息時間通常不到一小時,無法坐下來好好用餐,而下班又要飛快趕回市區,無心逗留,因此在附近出沒的人難以變成店內的主要客人,成為經營上的一大難關,然而,選擇在看似商業沙漠地帶開店,對方翊來說,卻有一種回到家的感覺。

現在的店址是他小時候的居住空間,店內一樓是爺爺以前開業的診所,因此在創業之初資金與資源不足的情況下,他選擇回老家創業,是為了讓自己能安下心來,有後盾的感覺。在店內的裝飾品,曾經是爺爺診所內保留的醫療儀器,店內陳設的桌腳、層架、展示櫃,是運用家裡鐵工廠的機具,由自己慢慢摸索打造,木桌子的桌板也是跟朋友請教,學會如何將鐵架與木板相合,一點一滴打造出來,因此,即使這樣的地理位置並不理想,但因為是從家園出發,由自己的雙手打造,方翊更能安心的在事業上打拚。

在料理中 創作屬於FOLKS的味道

端出自行研發的料理是方翊開店的初衷,現在的菜單是以餐點為主,咖啡為輔,如此設計也是考量到在彰水路一帶,咖啡店、創意小店不多見,生存困難,因此「提供一份令人想吃的料理」是開店的必要選項,讓大眾願意走進來。在餐點製作上,與在地小農合作,每週兩次供應最新鮮的水耕蔬菜,包含奶油萵苣、紅捲鬚、綠捲鬚……等蔬菜為主軸,想讓大眾知道,即使是小小的餐飲空間,提供的食物仍是產地直送、每日新鮮製作的好料理。在這樣的想法下,主廚料理也是他不斷自我挑戰的項目,以固定選項加上每週限定新品,促使自己對料理付出更多的努力。

訪談後 白色方塊也想說

雖然FOLKS的老闆與店齡都相當年輕,但看到老闆為自己想做的事努力,白色方塊覺得是這代年輕人自我掌握、與挑戰自我的態度。透過時間軸,我們看到的是一間小店自我特色的累積,就好比在訪談時,問到店內的乾燥花陳設是從何而來的靈感,方翊說,是之前在民宿工作時受到的影響,當時老闆對花藝特別有研究,因此加深他對乾燥花的知識與美感建立,這樣的累積也反映在店內陳設上,從開店至今,店內乾燥花的運用從單一的花束,轉變到牆柱上的延伸或與店內色彩呼應,這讓我們看到小店不斷的蛻變。

2018年初,為了改善店內座位與動線,FOLKS店休了一段時間,以店齡如此之輕的咖啡店來說,開幕不久隨即再裝潢是比較少見的行為,需要一股全盤投入的衝勁,但也可看出方翊對自家小店的期許與要求。店內經營,外場有妹妹、內場廚房由方翊主持,兄妹可互相討論出餐流程、客人對環境與餐點的反饋,雖然時常鬥嘴,但兄妹倆直話直說,反而更能溝通,也讓FOLKS的實質精神猶如店名一般,親近無礙。

Paving the way into future in nothingness

in Taiwan, leaving campus essentially means entering the job market.However, having a degree does not necessarily lead to a certain career path.Fang Yi, the owner of FOLKS, has some knowledge in this regard, something you won’t learn from school. Let’s hear about what he has to say.

Only through identifying your passion will you realize what you truly want to do

FOLKS is about to celebrate its one-year anniversary. With hindsight, it was never a random or sudden decision. When Fang first graduated from university, he entered CNC industry as a reasonable choice with his degree in industrial engineering. However, he was never really passionate about it.In the following years, Fang kept changing jobs, uncertain of what he really wanted to do. Until one day, he visited a cafe in Taichung. A cup of coffee with latte art was served, and he suddenly realized that he wanted to learn about coffee and open a cafe.

Since that moment of awakening, Fang left the industrial field and started looking for opportunities to learn about coffee. He worked several jobs at cafes, restaurants and hostels with little relevant experience in the field, but he soon picked up the culinary and coffee-making skills. He worked diligently for 5 years, delving into something he was really interested in.

Even in the wilderness, home gives a sense of assurance

Generally speaking, a good location means good business. Yet, FOLKS sits in the suburb of Changhua City. The location is an exit point for locals in Changhua to leave the city. The area is mostly populated by small factories of which workers only have short lunch breaks. After work, they’d usually return to downtown Changhua immediately. Therefore, people in that area are definitely not FOLKS’ target customer. That said, choosing to open up a business here in the wilderness is like choosing to go home.

As a matte of fact, the house FOLKS is currently in is where Fang used to live when he was a kid. The first floor was originally his grandfather’s clinic. When he was going to start up the business with limited resources, he chose to settle down in his hometown at his family house so that he could have this sense of assurance. The decor involves medical equipments remained from his grandfather’s clinic. Furnitures were also homemade using equipments from Fang’s family steel factory. Little by little, FOLKS came into being under Fang’s dedicated effort. The location might not be ideal, but the sense of assurance derived from building something on the basis of home is something irreplaceable.

Creating FOLKS’ signature dish

Fang wanted FOLKS to be known as a deli that serves homemade food that features personal characteristic. The current menu places an emphasis on meals while coffee comes second. Commercially speaking, the menu is an insurance in an area where cafes or creative stores are almost nonexistence.Offering dishes that would easily appeal to customers is somewhat necessary in order to sustain the business.

FOLKS collaborates with local farmers, using fresh vegetables coming in directly from the farms twice a week. Fang wants let people all meals are prepared using freshly delivered ingredients straight from the place of production regardless of the scale of his cafe. As a chef, Fang also challenges himself by coming up with a weekly special dish. It is a way of always striving towards becoming better.

FOLKS’s owner and the cafe itself may seem young, but the solid experiences Fang has accumulated in the past along with the genuine dedication is certainly undeniable. For instance, on the topic of FOLKS’ dried flower decor, Fang spoke of his acquaintance with
a boss he worked for at a hostel where he cultivated an aesthetic sense and knowledge on making dried flowers. That process of learning is embedded in the change we’ve seen throughout FOLKS development and growth. The interior flower decor became more and more colorful and of scale, which indicates the change for the better.

In early 2018, FOLKS was closed for a while to rearrange seatings and the flow. Honestly speaking, such determination is rarely seen nowadays. It shows Fang’s undivided devotion to his cafe. With the help of his younger sister, Fang handles the kitchen while both of them discuss and make adjustments based on customer feedback. Fights between the brother and the sister are inevitable and quite frequent, but at least they are open to each other, like the name of the cafe, FOLKS, an indication of intimacy.
